Ingredients: Lasagna noodles, salad oil, ground beef, dried onion, parsley, celery, garlic powder, salt, tomato sauce, hard boiled eggs, mozzarella cheese, cottage cheese.

Directions:Cook a 13 oz. pkg. of lasagna noodles according to directions. Rinse under cold water & drain. Heat 2 T. salad oil in a large skillet - brown 1 lb. ground beef, stir in 2 T. dried minced onion, 2 T. chopped parsley, 1/4 c. chopped celery, 1/4 tsp. garlic powder. 1 1/2 tsp. salt & 3 - 8oz.cans tomato sauce. Cover & simmer 15 minutes. Have handy 4 hard boiled eggs sliced, 1 lb. sliced mozzarella cheese & 1 pint large curd cottage cheese. Reserve a few egg slices for garnish. Put in oiled 13x9x2 dish, layer about 1/3 of each ending with meat sauce. Bake 350º 30 minutes |

Notes: I remember preparing and cooking this recipe for the first time with my Mom watching over me. I feel her presence in my kitchen today, and I remember her guidance while we worked this recipe. I was fifteen, and that was the first time I made lasagna. I was trying to impress my boyfriend at the time, and convince my Dad that I was as good a cook as Mom. I only succeeded with her efforts.
