3 lbs. spareribs cut in serving pieces, 2 or more cloves of garlic, 1/2 c. brown sugar, 1/2 c. vinegar, allspice, 1 pt, tomatoes

Brown spareribs in skillet, then place in roaster in layers. Sprinkle with salt, pepper and allspice. Pour the sugar, garlic and vinegar mixture over the ribs; baste with tomatoes. Bake spareribs one and one-half hours at 350º.

I gathered that this tasty preparation called for the sugary spicey "glaze" to be added at the onset of roasting while the tomatoes acted as liquid relief during the cooking process. There were no notes or conjecture associated with this entry on page 89. Only my Mother's words speaking to me about this recipe.
