2 egg yolks, 1/2 tsp. salt, 1/2 tsp. sugar, 1 1/2 c. milk, 1 1/2 c. flour, 1/2 T. melted shortening, 2 tsp. baking powder, 1 1/2 c. raw grated potatoes, egg whites, grated onion.

Directions:
Stir egg yolks, salt, sugar & milk together & add flour. Stir & add the melted shortening & baking powder, add grated raw potatoes. Fold in 2 egg whites that have been stiffly beaten & add a little grated onion. Cook on a greased hot griddle.

Grandmother's recipe was "tweaked" a bit to make it easier to read & prepare She commented within the recipe about adding the grated onion to the batter instead of putting it on top of the pancakes while they cooked stating "it's easier." Always looking for ways to improve the production!
