Season mashed sweet potatoes with butter, add salt & 1 egg yolk. Beat well. Add 1 T. heavy cream. Shape into balls. Dip into a beaten egg then into bread crumbs. Fry till brown in deep fat.

This seems like such a yummy winter vegtable dish to accompany pork chops or leftover turkey. My Grandmother taught my Mom to be such a great and smart cook!
