Combine 2/3 cup Minute Rice, 2 3/4 cups milk, 1/3 cup sugar, 1/2 teaspoon salt, 1/3 cup raisins in saucepan. Bring to a boil, stirring frequently. Reduce heat, simmer 10 minutes stirring occasionally. Mix 2 slightly beaten eggs, 1 teasp. vanilla and 1/3 teasp. nutmeg in 1 qt. casserole. Slowly stir in rice mixture, mix well. Place in pan of hot water. Bake at 325º for 20 - 30 minutes or until center is firm. Cool at least 1 hour before serving.

I had to include this recipe written out by my Mom. The notation at the end of the page reads, "Tony likes this." I remember my Grandmother's rice pudding and wonder if she used minute rice.... So cool that my Mom referenced a "water bath" for baking this pudding. Brilliant!
