1 1/2 cup whipping cream
1 1/2 cup chicken broth
1 cup white wine, or additional broth
1/2 cup minced shallots
1 tablespoon minced garlic
4 teaspoons Herbes de Provence
3/4 teaspoons salt
1 (10 ounce) container light herb garlic cheese
4 pounds russet potatoes, peeled and sliced

Preheat oven to 400 degrees . Use a 13 x 9 inch glass pan or similar sized one. In a large saucepan, combine the first 7 ingredients; bring to a simmer. Add 1/2 of the cheese and whisk until smooth. Add the potatoes and bring back to a simmer. Put potatoes and sauce in glass pan and cover with foil. Bake for 15 minutes and then remove foil. Bake for about 50 minutes more or until potatoes are tender. Dot with remaining cheese and bake for 5 more minutes. Let sit for 10-15 minutes before serving.
