1 -3 oz. pkg. raspberry or cherry gelatin, 1 c. boiling water, 1 - 1 lb. 1 oz. can fruit cocktail (drain), 1 c. fresh or frozen cranberries, 1 tsp. grated orange rind, 1/4 c. chopped celery, 1/4 c. chopped nuts. Salad greens.

Dissolve gelatin in boiling water. Drain fruit cocktail and add 1/2 cup syrup to the gelatin. Grind cranberries using medium blade of food chopper. Add fruit cocktail, cranberries, orange rind and celery to gelatin. Chill until mixture sets a little, turn into six or eight molds. Chill.

My Mom would later make this jello salad in one large jello mold & top it with a dollop of sour cream. The greens were used as the base of this delectable holiday side dish. I want to say that one time she topped it with sweetened, whipped cream cheese. Michael loves his Mother-in-Law's jello salads!
