1 1/2 c. sugar
6 T. lemon juice
2 c. cold water
2 T. butter
pinch of salt
2 T. both flour & cornstarch
4 egg yolks

Put water & sugar & 1/2 lemon rind on stove, let boil a few minutes - add cornstarch & flour & cook well, add yolks - cook a little, remove rind then cook a little, add butter then the lemon juice.

The filling for Mim's lemon pie was referenced without additional baking instructions such as pouring it into a baked crust & adding/lightly browning the egg whites. This may have implied that she just poured the lemon filling into a prepared crust with or without the egg white topping, or perhaps she topped the cooled pie with whipped cream. I adore thinking about the possibilities!
