2 lbs Red potatoes, peeled and medium dice
1/2 C Mayonnaise
1/4 C Sour Cream
1/4 C Bacon, Cooked and crumbled
1/4 C Chives, minced
1/2 C Shredded Colby (or any other Jack Cheese will work)
As needed Hot Sauce
As needed Salt and Pepper (make sure that you don't under salt this dish, potatoes need salt in a salad like this!)

Boil the potatoes until tender. Strain and allow to cool. Meanwhile in large mixing bowl combine remaining ingredients and stir together. Once the potatoes have cooled, fold them into the dressing and refrigerate. For Best results, make the day before and refrigerate overnight.
