Carrot Cake Recipe

2 c flour
2 tsp baking soda
1 tsp salt
2 c sugar
1 tsp cinnamon
1 c oil
4 eggs
2 c carrots, ground fine
1 small can pineapple, crushed or tidbit, drained (reserve some for frosting)
1 8 oz package cream cheese
1 stick margarine
1 box (2 cups) powdered sugar
pineapple juice, as needed

Bake in cake pan (2 layers) at 350 degrees for 30 minutes. Frost when completely cooled.
