1 cup chopped onion
2 tablespoons melted butter
3 cups self rising flour
1/2 cup shortening
2 large eggs, beaten
1 cup milk
2 cups sharp shredded cheddar cheese
1/4 cup melted butter

Directions:
Directions:
Sauté the onions with 2 tablespoons of butter until tender
In a large mixing bowl pour flour and cut in the 1/2 cup of shortening [will look coarse]
In a separate bowl mix the eggs and milk
Add the egg mixture to the flour, mixing until slightly moist
Add the sautéed onion and 1 cup of the cheddar cheese
Spread dough onto a greased 9 inch square baking dish
Sprinkle with remaining cheese and the remaining 1/4 cup of melted butter
Bake at 400 degrees for approximately 25 minutes
