1 1/2 c. cooking oil
2 c. sugar
2 tsp. vanilla flavoring
3 eggs
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 c. chopped dates
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 c. chopped nuts
3 c. chopped fresh apples

Directions:

Mix sugar and oil with electric mixer, beat at high speed for 1 minute. Add eggs one at a time, beating after each addition for 1 minute. Mix in dry ingredients and chopped dates. Fold in vanilla flavoring, apples, and nuts. This is a stiff batter, but the juice from the apples will thin it as it bakes. Grease and flour and angel food or bundt pan. Bake at 325º for 1-1 1/2 hours. Test with a straw, when cake shrinks from sides of pan it is done. Let cool on rack for 15 minutes before removing from pan. This cake keeps well.
