Salad:
1 bunch romaine lettuce
1 to 2 ribs celery, sliced thin
1/2 small red onion, sliced thin
1 small can mandarin oranges, drained
Caramelized sliced or slivered almonds*

Dressing:
Less than 1/4 cup oil
2 tablespoons vinegar
2 tablespoons sugar
1 teaspoon dried parsley
Salt and Pepper

*Almonds:
Put a good amount of sugar and almonds in a small fry pan, heat over low heat, stirring until sugar melts and caramelizes almonds. Cool on waxed paper.

Mix dressing and pour over salad at serving time.
