1/4 cup butter
2 tsp. vegetable oil
1 large onion minced
2 garlic cloves minced
3 lbs. squash sliced
3 1/2 - 4 cups chicken stock (canned broth)
1 cup half and half
1 1/2 tsp. salt
1/2 tsp. white pepper

Directions:
Directions:
Heat butter and oil and saute onion and garlic. Add squash and broth and simmer until tender. Using a little half and half with each batch, blend squash mixture until smooth (divide into 4 batches). Check seasonings; then chill. Can be served hot or cold. Garnish with chopped fresh parsley.
