2 pkgs Jiffy cornbread mix
1 medium onion, chopped (can omit this)
2 c shredded cheddar cheese
3 T butter
1 can cream corn
1 1/2 c sour cream
4 eggs, beaten
1/3 c oil

Directions:
Directions:
Mix together all ingredients. Spray 9x13 pan with Pam. Bake at 350º for 50-55 minutes or until lightly browned. Refrigerate or freeze leftovers.
