1 lb ricotta cheese
1 c. sugar
1/2 c. milk
4 eggs, separated
juice of 1 lemon, plus rind
*nutmeg, optional
2 - 8-9" pie shells, unbaked

Directions:
Directions:
Preheat oven 350º. Separate egg yolks from whites.
In separate bowl, beat whites until soft peaks form.
Mix ricotta, sugar, milk, lemon, and egg yolks. Fold in whites.
Pour filling into unbaked pie shells. Sprinkle nutmeg over filling.
Drizzle 2 TBL melted butter on filling.
Bake 350º approx 40-45 minutes, or until knife inserted in filling comes out clean.
Pie will puff out when baking, but will deflate as it cools.
Serve room temp or chilled. Fresh fruit great with pie!
