1 (9 inch) unbaked pie shell
2 c. fresh spinach
1 c. fresh mushrooms, sliced
1 c. asparagus or broccoli, chopped
3/4 c. onion, chopped
2 1/2 tsp. olive oil
3 eggs, lightly beaten
1 (5 oz.) can evaporated milk
1/4 tsp. each salt & pepper
1 c. cheddar cheese, shredded
6 bacon strips cooked & crumbled
1/2 c. tomato & basil feta cheese

Line unpricked pie shell with double thickness heavy duty foil. Bake at 450º for 8 minutes. Remove foil and bake 5 minutes longer. In skillet, saute vegetables in olive oil. In a bowl, whisk eggs, milk, salt and pepper. Add veggies to egg mixture. Stir in cheddar cheese and bacon. Pour in pie crust. Sprinkle with feta cheese. Cover edges loosely with foil. Bake at 375º for 30-35 minutes or until a knife comes out clean. Serve with more feta cheese and sliced tomatoes.
