Irish Soda Bread on the Barbeque Recipe

Ingredients: 8oz strong bread making flour (though plain flour works too) 1oz butter ½ teaspoon bicarbonate of soda 175ml buttermilk (on holiday I used yogurt mixed with a little milk if I was unable to find this) Pinch of salt

Directions:Mix the flour, salt and bicarbonate of soda Add butter (softened) and buttermilk and mix well then knead for 2-3 mins Shape into a flat round shape Place onto a well oiled medium heat barbeque (or oil the dough before you put it on) and cook for about 5-10 minutes each side It can be baked in a hot oven for 20-30 minutes.
Serve straight away |

Notes: I love homemade bread and have my own bread maker so when we went away for 4 weeks last year on a camping tour of the UK I wondered how I would manage without fresh bread. I then read about how Irish soda bread can be baked on a griddle over an open fire and found my solution. I have found that this recipe works well on a barbeque griddle but also on any traditional barbeque. The trick is to ensure the barbeque is not over hot. This is a lower fat Irish soda bread recipe, I would imagine any Irish soda bread recipe would work well too. I find this goes well with almost all barbeque dishes and salads, its fantastic with cheese and chutney. If I run out of bread at home and need to make a packed lunch for my children I have been known to make this, cook it on a griddle or heavy frying pan and have it ready in 25 minutes. It makes an interesting alternative to standard sandwiches
