1 envelope unflavored gelatin
1/4 cup sugar
1 1/4 cup milk
2 egg yolks beaten
1/2 t. almond extract
1/2 t. vanilla
2 egg whites
1/4 cup sugar
1 cup chilled whipping cream or whip
3 1/2 oz. toasted coconut

Directions:
Directions:
Mix gelatin and 1/4 cup sugar in small sauce pan. Stir in milk and egg yolks. Heat over low heat stirring constantly until gelatin is dissolved. Stir in almond extract and vanilla. Refrigerate until slightly thickened. Beat egg whites and add sugar slowly. Fold egg whites into gel mixture. Fold in cream and coconut. May put in serving containers. Refrigerate at least five hours. Garnish with toasted coconut.
