Hummingbird Cake Recipe

3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 c. oil
1 1/2 tsp. vanilla
1 8-oz. can crushed pineapple, undrained
1 c. chopped pecans
2 c. bananas, chopped in small pieces


1 8-oz. package cream cheese, softened
1 stick oleo
1 lb. box powdered sugar
1 tsp. vanilla
1/2 c. pecans

Mix first 5 ingredients together until well mixed. Then mix eggs and oil and add to first 5 ingredients. Add remaining ingredients. Bake at 350 for 45 minutes or until done.


Mix first 2 ingredients until fluffy. Then add other ingredients. After icing cake, top with pecans.
