1 POUND RED KIDNEY BEANS
½ ONION CHOPPED
½ GREEN BELL PEPPER CHOPPED
1-2 TOES OF GARLIC CHOPPED
1 POUND SMOKED SAUSAGE
TONY CHACHERE’S OR SALT & PEPPER TO TASTE

SOAK BEANS IN POT OF WATER OVERNIGHT.
COOK ON MEDIUM TO HIGH TEMPERATURE UNTIL BOILING.
TURN TEMPERATURE DOWN TO MEDIUM TO LOW AND COOK BEANS UNTIL SOFT (FOR SEVERAL HOURS). WHILE COOKING, SMASH A FEW BEANS AGAINST THE SIDE OF THE POT, THIS WILL MAKE A CREAMY SAUCE. ONCE BEANS ARE SOFT, ADD ONIONS, BELL PEPPER, GARLIC, SAUSAGE AND SEASONING. COOK FOR APPROXIMATELY 1 HOUR OR UNTIL DESIRED TEXTURE IS REACHED.
