3 eggs
1 3/4 c. sugar
1 c. oil
2 tsp. pure vanilla
1 tsp. lemon extract
2 c. loosely packed grated zucchini
2 c. flour
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
1 tsp. baking soda
1 tsp. salt
1 tsp. baking powder

Directions:
Directions:
Beat eggs until frothy. Add sugar, oil, vanilla and lemon extract. Beat until thick and lemon colored. Stir in zucchini, flour and rest of dried ingredients that have all been stirred together well. Pour batter into 2 oiled and floured loaf pans (usually fills them about 1/2 full or so). Bake 1 hour at 350. Let loaves cool in pan for 10 minutes before removing them. Cut and serve.
