1 box vanilla (or white or yellow) cake mix (plus oil, water and 3 eggs for the cake)
lots of fresh blackberries (about 2 qt.)
1/2 to 3/4 c. granulated sugar
1 1/2 pt. heavy whipping cream
3 lemons, zested and squeezed
a pinch of kosher salt

Start by pouring a handful (or more) of sugar over your berries to get them saucy and sweet. Next, make the cake, according to package directions. I make it in a sheet pan, so that it’s nice and thin. The box won’t tell you how long to cook a sheet cake; 20 minutes is perfect. Cool completely. While this cools, zest all three of your lemons. Next, juice the lemons and fish out all the seeds. After your cake is cool, pour your very cold whipping cream into your mixer. Add a pinch of kosher salt. Whip it on high (start slowly) until it gets creamy and thick. When it’s nice and thick, add the sugar (start with 1/2 cup, and add more if you like it sweeter), lemon zest and lemon juice. Whip it some more. It will look all sloppy and watery, but don’t panic - it will get thick again after you show it who’s boss. Get out your trifle bowl, big bowl, or whatever you want to layer this dessert in. Start with putting the blackberries in the bottom. Then tear up your cake and put a bunch of hunks on top of the berries. Then put a giant blob of your lemon cream on top of the cake. Repeat according to your bowl-size.
