1 (15 oz.) can LeSueur peas, drained
1 (12 oz.) can of Shoepeg corn
1 (15 oz.) can of sliced carrots, drained
1 (15 oz.) can of French style green beans - drained
1 c. finely minced celery
2 bunches finely chopped green onions
½  c. finely minced green pepper – optional
1 c. oil
¾ c. sugar (I use 1 c. Splenda)
1 c. apple cider vinegar
1 ½  tsp. salt
¼ tsp. pepper

Directions:
Directions:
Mix oil, sugar, vinegar, salt and pepper together and heat until sugar is dissolved. Pour hot mixture over vegetables – mix well and refrigerate for at least 24 hours. The longer it sets the better it gets. Serves 10-12.
