1 lb spaghetti noodles
2 cans original Rotel tomatoes, drained
2 cans cream of chicken soup
1 lb Velveeta cheese
1 lb chicken, cooked and diced
1 tsp onion powder
1 tsp dried cilantro
1 tsp cumin
salt & pepper

Directions:
Directions:
In medium saucepan over medium heat, combine soups, Rotel tomatoes, and Velveeta. Stir until cheese is melted through. Season with onion powder, cumin, cilantro, salt & pepper. Adjust seasonings to taste. Turn heat down to low, stirring occasionally.

Cook spaghetti until done, drain and rinse well. Combine spaghetti noodles, cheese sauce, and chicken. If desired, top with shredded cheddar.
