Boston Butt, butt rub

Directions:

Rub butt the night before and refrigerate. Prepare grill for indirect heat, place a pan of water beside coals. put butt over water close lid cook 4-5 hours or until 170 on meat thermometer.

Try not to open any more then necessary. You can add wood chips to coals for extra flavor....Wes likes to use oak (any seasoned hard wood will be good)
