1 cut up chicken, self rising flour, salt and pepper, milk , oil

Clean chicken pieces salt and pepper. Dredge each piece in flour and dip into milk bath and then dredge into flour again. Put oil in a very heavy pan with lid appx 1/2 full. Heat to 350º or till oil bubbles when a little piece is put in oil. cover and let cook on med to high heat appx 6-8 minutets and then turn. continue cooking until golden brown and oil does a little "bubbly" action...drain on paper towels. Try not to mess with too much. If unsure if done you can stick a fork in a dark piece and see if the juice runs clear.
