Small young beets
2 cups water
2 cups vinegar
2 cups sugar
1 tsp whole allspice
1 thinly sliced lemon
1 tbs whole cinnamon
1 tsp whole cloves

Directions:
Directions:
Cook beets until nearly tender. Dip into cold water and peel off skins. Bring water, vinegar, sugar, allspice, lemon, cinnamon and cloves to a boil. Pour over beets and simmer 15 minutes. Pack in jars and seal.
