2 1/2 pounds of potatoes (can use red or Yukon gold), peeled
3/4 pound of onions
2 large eggs
1/2 teaspoon baking powder
1/4 cup flour or matza meal
Salt and pepper to taste
Vegetable oil for frying

Directions:
Directions:
Grate potatoes or shred and then chop a little. Squeeze grated potatoes in strainer to remove all water until only pulp is left. Put potato pulp in large mixing bowl. Chop onions finely and mix with beaten eggs. Add to potato mixture. Season to taste. Heat one inch of hot oil in deep frying pan to 375 degrees F. Drop one full tablespoon of batter in hot oil to test temperature. Fry until brown on one side and then turn. Fry until completely browned. When done, taste latke and adjust batter seasonings if necessary. Drop tablespoons of batter into frying pan until pan is full. Fry batch on each side until completely browned . Remove from oil and wait for oil to reheat before making a new batch. Place latkes on paper towels to drain and serve.

Chanukah fare or great anytime as a meal unto themselves or with beef. Great with applesauce or sour cream. Prepare to be greasy. Best eaten fresh but you can freeze and reheat them in the toaster oven at a high temperature for 5-10 minutes.
