1 c. sugar
3 large eggs
3/4 c. sour cream
1 tsp. vanilla
1 1/4 c. all-purpose flour
3/4 c. yellow cornmeal
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
honey or vanilla ice cream (optional)

Directions:
Preheat oven to 350º. Spray 9 inch square baking pan with non-stick baking spray with flour. In a large bowl, beat sugar and eggs at medium-high speed with a electric mixer until light and fluffy (about 6 minutes). Add sour cream and vanilla, beating until smooth. In a medium bowl, combine flour, cornmeal, baking powder, baking soda, and salt. Gradually add to sugar mixture, beating just until combined. Pour batter into prepared pan and bake for 25 to 30 minutes, or until a wooden pick comes out clean. Let cool for 30 minutes. Cut into squares to serve. Top with ice cream and garnish with honey and fresh mint, if desired.
