Bake at 350 for 30-40 minutes until golden brown. This recipe make one 9" round pie dish or 10"square. Double for 13x9x2. I use pyrex so you can cut and serve from it.

3 small green zucchini or mix yellow (cubed)
1 small onion diced
1/2 cup oil ( I use canola )
1 cup Bisquick mix ( I use low fat )
1/2 cup of grated cheese ( I like color so use jack & chedar)
4 eggs
Mix all ingredietns and place in spam sprayed pan

Can be served warm or cold. cut in squares and serve.
