4 Pounds fresh pitted sour cherries
1 1/2 Cups Sugar
3 Tablespoons Minute Tapioca
1 Teaspoon Almond Extract
1 Tablespoon Butter

Directions:
Directions:
Mix all of the ingredients except the butter.
Let stand 15 minutes.
Pour into fresh pie crust.
Cut butter into small pieces and place on top of the mixture.
Cover with 2nd rolled pie crust.
Cut slits in crust to vent.
Paint on milk with pastry brush to promote browning.
Cook in 400 degree, pre heated oven for 45 to 50 minutes

I use a Powdered Sugar Glaze applied when removed from the oven.
