1 c. shortening 2 c. sugar 3 ripe, mashed bananas 4 eggs beaten 1 tsp. salt 2 1/2 c. flour 2 tsp. baking soda 1 Large bowl

Directions:
Directions:
Sift dry ingredients. Cream shortening with sugar, add bananas and eggs. Blend in dry ingredients. Mix for 5 minutes. This should be mixed in a large bowl as this mix will get very high! Bake at 350 for 40-50 minutes.

This recipe tastes so different from regular banana bread. It was given to me by my friend Bonnie who got it from our chef from the hospital when he worked at the Kona Inn in Hawaii.
