4 eggs 3/4 c. sugar 1/2 tsp. salt 1/4 tsp. nutmeg 2 2/3 c. milk 1 tsp. vanilla 1 9" unbaked pie crust 1 T. butter, softened

Directions:
Directions:
Prepare pie crust. Rub unbaked crust with butter, refrigerate. Preheat oven to 425º. In medium bowl with wire whisk beat ingredients, except nutmeg,until slightly frothy. Place pie on oven rack and pour milk mixture into piecrust. Bake for 15 minutes at 425º then lower temperature to 350º and cook for approximately 40 minutes. When knife is inserted into middle of pie and comes out clean, it is done. Remove from oven, cool. Garnish with nutmeg.
