1 cube butter (melted) 1/4 lb
1 pound shredded Monterey Jack cheese
2 cups "Bisquick"
1 10oz pkg frozen creamed spinach (thawed)
2 Heaping tablespoons dried minced onion
1 cup (8oz plain yogurt or buttermilk
1/2 npinbt cottage cheese
1 4 oz pkg cream cheese (softened)
2 Heaping Tbsp sour cream
1/2 pint cottage cheese

Preheat oven to 350. Mix all ingredients together until well blended. Pour into 9 x 13 dish which has been sprayed with Pam. Bake at 350 for 1 hour until top is light golden brown.

You can omit the spinach and make it plain and use a combination of cheeses. You can also vary this by adding optional items like: diced green chili's, diced ham, finely chopped onions, artichoke hearts. To cut calories (ha ha) use non fat cottage cheese and eliminate cream cheese and sour cream.
