2 - 6 oz. packages of orange gelatin 4 C shredded carrots (about 1-1/2 lbs.) 1 20 oz can chunk pineapple in it own juice (drained and set aside.) 1 C boiling water
Add gelatin to boiling water and stir to dissolve and add pineapple juice. Stir until thoroughly mixed. Place the pineapple and carrots in the gelatin mixture, stir to blend. Pour into serving dish. Chill until firm.
