4 eggs, separated 2 T. flour 7 0z. can Ortega Whole Green Chiles 1 lb.grated jack chesse 8x8x2 inch pan

Directions:
Directions:
Beat egg yolks until thick and lemon-colored. Add flour and beat again. Beat egg whites until stiff and fold into egg yolk mixture. Slash chiles with knife and remove seeds and fiber. Grease pan. Put in half of egg mixture. Add half of chiles. Layer with cheese, and the rest of chiles. Top off with the rest of egg mixture. Bake 20 minutes in 400º oven.
