2 c. beefstock
1/4 c. rice
3 T. butter
1 carrot, sliced
1 onion, chopped
1/4 bay leaf
1/2 tsp. dried thyme
1 1/2 lbs. lobster
1 c. white wine
4 c. chicken stock
1 T. tomato paste
1 c. cream
Salt and pepper to taste

Cook beefstock and rice. Keep covered until done then set aside. Melt 2 T. butter in large pot. Add carrots and onions and cook slowly for 5 minutes. Add bay leaf, thyme and lobster, covered. Cook 10 minutes. Add wine and chicken stock and simmer partially covered for 15 minutes. Strain the broth then add unstrained rice to the broth. Melt butter into cream then add the tomato paste. Cook until smooth then add to bisque. Add salt and pepper and heat...do not boil.
