1 5 lb. chicken (cut-up)
1 Onion (diced)
4 Celery Stalks (diced)
4 Carrots (diced)
Salt & Pepper to taste
2 C. Flour

Directions:
Directions:
Boil chicken, with vegetables, salt & pepper. Remove chicken from pot, when cool debone and break into portion size.
Roll in flour, then egg wash consisting of:
2 Eggs
1 Pint of Milk
Pinch of Salt & Pepper
Roll in cracker crumbs, then deep fry.

Supreme Sauce:
2 cups of chicken stock with vegetables, bring to boil.
Thicken with 2 Tsp. each, butter and flour.
Cook til thickened. Season with salt & pepper.
Pour over fried chicken.
