1 box rice , fresh or leftover
2 eggs
2oz flour
5 oz bread crumbs
2 oz mozzarella cheese (diced)
frying oil
salt

Directions:
Directions:
1) Cook your rice to direction on box if using fresh , if leftover heat until slightly warm so it is loose

2) Beat one of the eggs and incorporate the beaten egg to the rice.

3) In a small bowl beat the other egg with a pinch of salt.

4) In two separate plates place your flour in one and the bread crumbs in the other

5) take a generous tablespoon of rice and form a ball place a piece of mozzarella in the center and wrap the rice around the cheese until completely covered. Continue until your rice is gone

6)Dip the rice ball into the flour plate , then into the egg mixture , and then into the bread crumbs
* after bread crumbs press the ball together to hold firm

7) Then fry to a lightly golden brown watch closely and do not put more than three in the pan at a time depending on the size of your rice ball

This is a very very yummy dish and easy to make but very sticky , you can substitute orzo pasta for the rice if someone does not like rice and it works very well
