1 c. White Miso
1/3 c. Rice Vinegar
1/2 c. Light Brown Sugar, packed plus 1 tsp..
4 Skinless Salmon fillet's (6-8oz. each)
1 c. fresh lime juice (2-3 limes)
1 shallot, roughly chopped
1 (1/4 oz.) red Thai chili, roughly chopped
1 garlic clove
1 (2-inch) piece fresh ginger, peeled and grated ( 1tbsp.)
2 tbsp. flaxseed oil

1. In a medium saucepan combine, miso, vinegar, 1/2 c. brown sugar, and 1/3 c. water. Cook over medium heat, stirring occasionally, until miso and sugar have dissolved; cool to room temperature. In a re-sealable plastic bag combine salmon and miso mixture. Marinate in the refrigerator for at least 2 hours.
2. Meanwhile, in a blender, combine cilantro, lime juice, shallot, chili pepper, garlic, ginger, flaxseed oil, and remaining tsp. if brown sugar. Blend until mixture is smooth. Store in refrigerator.
3. Heat broiler with rack in the highest position. Lift salmon from marinate; broil salmon until cooked through, about 10 minutes. Serve with Cilantro sauces spooned on top.
4. Can serve dish with white rice and broccoli as a nice combination.
