2/3 cup whipping cream
12 oz semi sweet chocolate chips
2 teaspoon vanilla extract
1 to 2 teaspoon instant coffee power
1/4 cup unsweetened cocoa powder; may add some powered sugar to sweeten

Directions:
Directions:
Bring cream and coffee powder to a boil in a heavy medium saucepan. Remove from heat. Add chocolate; whisk until melted and smooth. Whisk in vanilla. Pour mixture into medium bowl, cover and chill until firm, about 3 hours. Line a baking sheet with waxed paper. Drop mixture by rounded teaspoons onto prepared baking sheet. Freeze until firm, about 45 minutes.

Place cocoa (and optional powered sugar) in bowl. Roll truffles into rounds and then roll rounds into cocoa mix. Cover with plastic and chill until ready to serve.
