1 pound finely ground lamb
2 cups very finely chopped onion
3 large cloves garlic, pressed
1/2 teaspoon thyme
1/2 teaspoon paprika
1 tablespoon minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1 egg

Directions:
Directions:
Mix meat and onions, then mix in garlic, thyme, paprika, parsley, salt, pepper and egg. Form meatballs or take 1/3 cup meat and form a flat log about 8 inches long. Thread meat on a long skewer. Repeat with remaining meat and 5 more skewers. Let meat sit and absorb the flavors for several hours. Then grill or broil until done.
