1 1/2 oz. butter
1 1/2 oz. shortening
4 oz. sugar
1 egg beaten
1 orange zest
1 lemon zest
8 oz. flour
2 tsp. baking powder
4 bananas
2 oz. walnuts, roughly chopped
some caraway seeds

Directions:
Directions:
Cream butter & shortening with sugar until light & fluffy. Add egg a little at a time while continuing to mix. Add lemon & orange zest. Fold flour & baking powder into mix with a spoon. Mash bananas with a fork & fold into mix. Finally add walnuts & caraway seeds. Spoon mix into a well greased loaf tin. Sprinkle more caraway seeds on top. Bake at 350 for 50 minutes, but check after 20 (if higher than 3000 ft.). When done, it will come away from pan. Stab a toothpick in the center of the bread, if it comes out clean, it is done. Turn out of pan after cooling 10 minutes. Store in air-tight container.
