1 1/2 oz. butter
1 1/2 oz. shortening
4 oz. sugar
1 egg beaten
1 orange zest
1 lemon zest
8 oz. flour
2 tsp. baking powder
4 bananas
2 oz. walnuts, roughly chopped
some caraway seeds

Directions:
Directions:
Cream butter & shortening with sugar until light & fluffy. Add egg a little at a time while continuing to mix. Add lemon & orange zest. Fold flour & baking powder into mix with a spoon. Mash bananas with a fork & fold into mix. Finally add walnuts & caraway seeds. Spoon mix into a well greased loaf tin. Sprinkle more caraway seeds on top. Bake at 350° for 50 minutes, but check after 20 (if higher than 3000 ft.). When done, it will come away from pan. Stab a toothpick in the center of the bread, if it comes out clean, it is done. Turn out of pan after cooling 10 minutes. Store in air-tight container.
