1 head cauliflower, cut in 1" flowerettes
2 tbsp olive oil
2 tbsp pine nuts
1/3 c sliced green olives
1 tbsp drained capers







Directions:
Directions:
Preheat oven to 425º. In shallow baking dish, toss cauliflower with oil. Roast 20 minutes. Add the pine nuts, olives, capers, and toss & roast for 10 minutes. The pine nuts should be lightly toasted. Serve warm or at room temperature.
