3 Eggs (or cholesterol-free egg product)
1 Cup Sugar
2/3 Cup Vegetable Oil
1 Tbl Vanilla extract
2 Cups packed shredded zucchini (about 2 med)
1 2/3 Cups finely crushed graham cracker crumbs (1 pack)
1 1/2 Cups all-purpose flour
1 Tbl + 1 tsp Cinnamon
2 tsp baking soda
1/2 teaspoon baking powder
1 Cup chopped nuts

Directions:
Directions:
Heat oven to 325. Grease and flour 2 loaf pans, 9x5x3. Beat eggs slightly in large bowl. Mix in sugar, oil and vanilla; stir in zucchini. Gradually mix in graham cracker crumbs, flour, cinnamon, baking soda and baking powder, stir in walnuts. Pour into pans.

Bake 50-60 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans. Cool loaves completely before slicing.
