1 clove garlic (or 2 shallots or 1 scallion), minced
1/2 cup extra-virgin flavorful olive oil
3 tablespoons wine vinegar
1/4 teaspoon salt (optional)
1/4 teaspoon black pepper
4 cups well-packed fresh parsley leaves
1/2 cup grated Parmesan cheese
4 medium tomatoes, thinly sliced

Process garlic, olive oil, vinegar, salt (if desired), and pepper in a blender container or shake well in a small covered jar. Pour dressing over parsley. Add Parmesan cheese and mix well. Put tomato slices in a glass bowl. Add parsley-cheese mixture and toss well.

Variation:
Omit cheese. Add 1/2 pound steamed green beans and 3 scallions, minced.
