2 small heads butter lettuce
2 ruby red grapefruits
2 tbsp. torn mint leaves (fresh)
1/4 c. fresh lemon juice (one good sized lemon)
2 tbsp. honey
2 tbsp. extra virgin olive oil
1 large avocado

Directions:
Directions:
Wash lettuce and place in large serving bowl. Add grapefruit. It needs to be peeled and all the skin removed. (The skin is bitter) Break up into pieces. Work over the bowl of lettuce so extra juice drops into the salad. Add mint.
Make dressing: Combine lemon juice and honey in bowl. Stir to combine and then whisk in olive oil.
Spoon 1/2 dressing into the salad and mix well. Divide the mixture onto plates and top with avocado slices. Provide extra dressing for those who want more.
