Ned's Favorite Cookies Recipe

1 c. granulated sugar
1 c. brown sugar
1 c. veg. oil
1 c. soft butter ( I use I Can't Believe It's Not Butter)
1 egg (beaten)
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
3 1/2 c. all purpose flour
1 c. rice krispies
1 c. quick oats uncooked (rolled oats)
1/2 c. coconut
1 c. walnuts (finely chopped)
1 c. mini chocolate chips

Mix sugars, oil, egg and butter until evenly blended
Add vanilla, rice krispies, coconut, oats, walnuts, and chocolate chips. Mix well.
Gradually add in flour.
Mix until dough is even.
Drop by teaspoon on an ungreased baking sheet.
Bake 10-12 minutes or until edges are golden.
Makes about 3 dozen

Once they cool, if you keep the cookies in a sealed container they will stay soft for quite a while.
