Rub: 1/2 tsp. salt 1/2 tsp pepper 1 tsp paprika 1/2 tsp oregano 1 tsp garlic powder 1 T. olive oil 2 chopped onions 1/2 tsp. ground pepper 1 cup water with 1 chicken bullion cube or 1 cup chicken stock 1 can of tomatoes or 3 fresh cut tomatoes 1 can of mushrooms or fresh button mushrooms, diced small

Directions:

Combine rub and rub into skinless chicken breast, cubed or whole. Saute onion,salt, pepper for 5 minutes. Add chicken, brown: then add chicken broth, tomatoes, mushrooms. Simmer for 45 minutes or until chicken is tender and sauce has been reduced. Serve over rice.
